Recipe: Tomato Aspic Ring
- 3 envelopes unflavored gelatin
- 5 cups tomato juice
- 1/2 tsp sugar
- 1/3 cup lemon juice
- 1 tsp onion juice
- 1/2 tsp tabasco
- Add 2 cups tomato juice to saucepan.
- Sprinkle gelatin over top of tomato juice.
- Place pan over moderate heat; stir constantly until gelatin is dissolved.
- Remove from heat and stir in remaining tomato juice and seasonings.
- Pour tomato mix into a 6 cup ring mold and chill until very firm.
Unmold on serving plate. Fill center with Shrimp Remoulade and serve with crisp greens.
