Recipe: Tomato Baked Salmon
- 4-5 lbs salmon or trout
- 1 1/2 quart tomatoes
- 1 red pepper, chopped
- 1 tsp Worchestershire sauce
- 1/2 cup cream or sour cream
- 1 medium onion, sliced
- 2 tsps lemon juice
- 2 stalks celery, chopped
- 1/2 envelope onion soup mix
- Preheat oven to 450° F.
- Mix well all ingredients except salmon.
- Place salmon in a flat baking dish, and pour mixture over salmon.
- Cover dish with foil.
- Bake at 450° F for 45-50 mins.
- Remove salmon from pan and keep warm.
- Take 1/2 cup cream or sour sour cream add to sauce in pan and thicken with cornstarch to desired sauce thickness.
- Serve over salmon.
