Coconut Lime Chicken Strips Recipe

• 1 cup Panko bread crumbs
• 1/4 cup Tone's^® Coconut Lime Seasoning Blend
• 1 egg, well beaten
• 1-1/2 pounds chicken tenders
• 1/4 cup Mazola^® Corn Oil
• 1/4 cup jalapeno jelly
• 1/4 cup honey
• 1/4 cup dijon mustard
• 1 tablespoon Tone's^® Coconut Lime Seasoning Blend

1. Combine the bread crumbs and seasoning in a shallow bowl.
2. Whisk the egg in a separate shallow bowl.
3. Dredge the chicken tenders in the beaten egg mixture, then roll in the panko mixture. Press crumbs onto surface of chicken so the crumbs stick on both sides.
4. Heat oil in a large nonstick skillet over medium high heat.
5. When oil is hot, add the chicken tenders and cook for 3 to 4 minutes until well browned. Turn chicken tenders and continue to cook 3 to 4 minutes until well browned and cooked through with an internal temperature of at least 170°F.
6. Drain on a paper towel lined plate.
7. Heat jelly, honey, mustard and 1 tablespoon seasoning just until jelly has melted.
8. Serve with Coconut Lime Chicken Strips.

Coconut Lime Shrimp Kabobs Recipe

• 8 skewers
• 1-1/2 pounds large peeled & de-veined uncooked shrimp
• 1 large red bell pepper, cut into 1-inch chunks
• 1 sweet onion, cut into 1-inch chunks
• 2 cups fresh pineapple chunks
• 1 tablespoon Mazola® Corn Oil
• 3 tablespoons Tone's® Coconut Lime Seasoning Blend

1. Soak skewers for at least 30 minutes if using wooden skewers.
2. Alternate shrimp, peppers, onions and pineapple on skewers.
3. Brush with oil and generously sprinkle with Tone's® Coconut Lime Seasoning Blend.
4. Grill skewers over Direct High heat, turning shrimp after about 3 minutes. Continue grilling until shrimp is cooked through and pink in color, about 3 to 5 minutes.
5. Serve with rice or quinoa.
