Recipe: Wild Rice Casserole
- 1 cup wild rice
- 1/2 pound bacon, chopped
- 1/2 onion, chopped
- 8oz fresh mushrooms
- 1 can chicken broth or beef broth
- salt and pepper to taste
Preheat oven to 350°F. Cook wild rice three times changing the water and cooking 15 minutes each time. Drain well. Saute' chopped bacon. Remove bacon and brown onion in grease. Chop fresh mushrooms. In casserole put cooked rice, chopped bacon, onion, salt, pepper, mushrooms and chicken or beef broth. Bake covered 350°F for 1 hour. Check for moisture. May have to add more broth if it appears to be too dry.
