Recipe: Zucchini Boats with Spinach



 

Recipes using Lawry's Garlic Salt

 

Zucchini Boats with Spinach Ingredients
  • 10 oz pkg frozen chopped spinach
  • 3 medium zucchini
  • 4 slices bacon
  • 2 tbsps flour
  • 1/2 cup milk
  • 1/2 tsp garlic salt
  • pepper to taste
  • 1/3 cup shredded Cheddar cheese
To make Zucchini Boats with Spinach
  1. Preheat oven to 350 degrees.
  2. Cook spinach according to directions on pkg; drain.
  3. Trim ends of zucchinin and cook whole in boiling water for 10 minutes.
  4. Drain, cut in half lenthwise, scoop out centers.
  5. Fry bacon slices, drain and crumble.
  6. Chop zucchini center pulp and add to spinach.
  7. Blend flour and milk; add to spinach mixture.
  8. Cook over medium heat, stir in garlic salt and pepper.
  9. Cook until mixture thickens.
  10. Place zucchini halves in baking dish and spoon in spinach mixture.
  11. Top with cheese and crumbled bacon.
  12. Bake 15 to 20 minutes.
Servings: 6 to 12 depending on how much you love zucchini.
