Recipe: Zucchini Bread
- 1 cup oil
- 2 cups sugar
- 2 cups grated zucchini
- 1 tbsp pure vanilla extract
- 3 eggs
- 3 cups sifted flour
- 1 tbsp ground cinnamon
- 1/4 tsp baking powder
- 1/2 cup chopped nuts (optional)
- 1 tsp salt
- 1 tsp baking soda
- Preheat oven to 325 degrees.
- Grease loaf pan .
- Beat eggs until light and foamy.
- Add oil and sugar, grated zucchini and vanilla.
- Mix slightly, but well.
- Sift together flour, salt, soda, baking powder and cinnamon.
- Add to the above mixture and blend well.
- Add nuts, if desired.
- Pour batter into well greased loaf pan.
- Bake at 325 degrees for 1 hour.
- Remove from pan and cool on rack.
