Recipe: Zucchnini Bread
- 3 eggs
- 1 cup canola oil
- 2 cups sugar
- 1 tsp pure vanilla extract

- 2 cups raw, peeled and grated zucchini
- 3 cups flour
- 1 tsp salt
- 2 tsps cinnamon
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 cup chopped nuts (optional)
- Preheat oven to 325 degrees
- Grease and flour 2 loaf pans
- Beat eggs until foamy.
- Beat in oil, sugar and vanilla;mix well.
- Mix in zucchini
- Sift dry ingredients into mixture and beat.
- Mix all ingredients well.
- Fold in nuts.
- Pour batter into 2 greased and floured loaf pans.
- Bake for 55-60 mins.
- Cool 10 mins before removing from pans.
