A different banana bread made with coconut flakes!
- 2 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 stick butter
- 1 cup sugar
- 2 eggs
- 1 cup bananas
- 1 tbsp orange rind
- 1 tsp pure vanilla extract
- 1/2 tsp almond extract
- 1/4 cup milk
- 1 cup grated coconut
- 1/2 cup chopped walnuts
- Preheat oven to 350 degrees F.
- Sift the flour, baking soda, and salt together.
- Cream the butter and sugar in a blends, add eggs, bananas, orange rind, vanilla extract and almond extract. Blend thoroughly.
- Add the dry ingredients, a little at a time, and alternating with the milk.
- Gently stir in the chopped walnuts and coconut flakes.
- Pour into a well greased loaf pan, and bake for 60 to 70 minutes.
