Am making a Birthday Supper for my Mom on Monday...

...and the menu will include some of her favs:

Marmalade-Glazed Ham, Cranberry-Pecan Rice Pilaf, Parsley-Boiled Potatos, Asparagus w/ "Egg Gravy", Honey-Wheat Clover-Leafs, and Banana Cake w/ Raspberries and Cream Cheese Frosting. (am toying w/ the idea of making the coca-cola glazed ham recently posted about here- but cannot find it- can someone help? Cookie- was that your recipe?...)

And of course there'll be a jelly-glass in the center of the table w/ the same l'il bouquet in it that we picked for her as kids: pink clover, purple violets and yellow dandelions.

Cooking with Coca Cola

I'd heard about cooking a joint of ham in Coca Cola years ago, but never got round to doing it...until my son came over & insisted I give it a go..Ok I gave him the benefit of the doubt. It turned out tasting of BBQ, with a sticky sweet glaze...Fantastic! I wouldn't cook it any other way now..has anyone else tried this?

Serves 4
Prep Time 5 mins
Cooking Time 1 hr 20 mins
Ingredients

* Ham joint 625g/1lb 6oz (off the bone)
* 2 ½ litres Coca Cola (see Cook’s tips)
* 1 Dsp Honey
* ¼ Tsp Mustard powder
* ½ Tsp Dark brown soft sugar

Method

* Place the ham in a large heavy saucepan (See Cook’s tips)
* Pour over the Coca Cola until ham is completely covered
* Bring to the boil
* Skim off scum as it comes to the boil
* Cover, but leave a slight gap for steam to escape and simmer for 1 hour 5 minutes
* Either leave the ham to cool in the Cola or take out and cool on a plate
* When ham has cooled carefully cut off the skin to expose the fat
* Use a sharp knife and score diagonally to make a diamond pattern
* Put ham into a foil container, ( See Cook’s tips) or foil lined baking tin
* Brush the honey over the scored fat
* Mix the sugar and mustard together and pat over the honey
* Cook in a preheated oven 240°C/475°F/Gas mark 9 for 10 minutes
* Take out and baste, then cook for another 5 minutes until glaze is bubbling
* Remove from oven and allow to cool slightly, then carve.

Cook's tips

* Use the normal Coca Cola, not the diet or Zero
* You can use a saucepan to accommodate the size of ham your cooking, and use more or less Coca Cola, just make sure the ham is covered by the liquid
* I use the freezer foil containers
* The amount of glaze ingredients in this recipe are to cover a small joint, just double or triple for a larger one, the flavour will remain the same

Do you know every morning I walk and I love this season and often find myself picking wild-flowers for my own pleasure, entertainment and enjoyment! *****Also*****!!!!!! One of our down the lane neighbors has peacocks much to my delight, they thrill me to no end. Yesterday the male was doing a wonderous display of his tail feathers and he was all puffed up and dancing to his hearts content. There are two females...I have no idea how impressed they were with his display but I was certainly pleased to happen along during his ritual! Both he & one of the females have tail feathers about 5 foot long, the other female has a regular lenght tail feathers. Of-course then there are the cardinals, and blue jays and all the other birds I get to see and hear as I walk, I tell you these little treasures on my morning walk make my day so much brighter! I am sure these little treasures that you add to your Moms Birthday Supper will touch her heart and soul in a way you will never know! One time my oldest son and daughter-in-law took me out to dinner for my birthday, it turned out to be the best birthday celebration of my entire adult life so far, I am going to write him and let him know again how much that meant! There really is a special warmth when a woman knows her children really love and care for her.

Cath- your morning walks in your new neighborhood sound lovely. The flowers, birds, etc. WOW. I love all birds- esspecially cardinals, too. They are the Illinois state bird and are pretty plentiful here. I remember as a l'il boy how odd I thought it was when I learned that it's only the males that are bright red- the females are the exact same size and unique shape- but they're tan/beige in color! Many folks aren't aware of that... And they make the sweetest music, too!

Yes the male Cardnial is stunning!!!! Kevin two of my recurring dreams are that I own my own Aviary and it is full of a splendid array of colorful birds, I LOVE BIRDS!!!! My second dream is of hatching babay turtles scurrying along the beach as they make their mad dash for the sea!!! When I was about 9 - 10 yrs. old I spent the night with my grandmother (an avid grower of roses) one early afternoon she was out in her rose garden and she began shouting for me to come quickly and bring a 5 gallon bucket from the back porch on my way>>>>there coming up out of the ground in her garden were hundreds of little red-eared slider hatchling turtles all scamppering to the surface, my grandmother and I tried to keep up as we picked them up and placed them in the bucket to carry them to the edge of the canal before the cats could get them! It was one of the events in my young life that has stuck in my psyche for a life time, and to this day I dream of baby turtles hatching! I also love turtles:)
 
Cathy do you know how to recognize birds by their song? We have one that sounds like a laughing monkey. It cracks me up. Any idea what that could be?

I know many birds by their song- the cardinal, the whipporwhil, eagles, ravens, crows, robins, magpies, blue jays, turtle-doves, chicken-hawks, red-winged blackbirds, sea-gulls... But a laughing monkey? Hmmm... I'll have to ask my Dad about that one!
 
Kevin how was your Mom's supper? It was to be today or tonight if I'm not mistaken? I hope you will all be happy and have a memory to hold in your hearts forever!

Aww, janie. How sweet! (sniff- sniff...)

Much of our experience w/ Mom has been burdensome and trouble-filled... and I miss the woman she was when we were little kids. But after so many years of estrangement and not having her in our lives- it such a blessing to have her now- even in her fragile state.

Thanks to you all for your compassion regarding Mom. It's not only appreciated- but treasured. hugz- k.
