Apple-cinnamon Pancakes

We made these this morning and they were *so* good!

INGREDIENTS:
1/4 cup butter, melted
1 egg
1 cup milk
1 cup shredded tart apple - you can finely chop it in a food processor to save time
1 1/4 cups all-purpose flour
1 1/4 teaspoons baking powder
1 teaspoon ground cinnamon
1-2 tablespoon(s) white sugar

DIRECTIONS:
In a large bowl, combine butter, egg, milk and apple. In a separate bowl, sift together flour, baking powder, cinnamon and sugar. Stir flour mixture into apple mixture, just until combined. Batter will be thick.

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
 
You really should make them since apples are in season right now - they were so simple to make and really filling and flavorful :). We used Granny Smith apples.
 
I liked it alot and I think I am going to try it this sunday .....
 
I make a big breakfast every sat. morning for the fam. I'll give these great sounding pancakes this weekend. Thanks.
 
I usually just make a few pancakes with cinnamon apples on the side. Which is just apples, cinamon, sugar, and butter.
