Country-Fried Catfish
2 eggs
dash Worcestershire
dash hot sauce
2 1/2 c. milk
1 c. yellow cornmeal
1/3 c. all-purpose flour
4 catfish fillets
Beat wet ingredients in a shallow dish. Mix cornmeal and flour in another shallow dish. Dip catfish in wet mix, then dredge in cornmeal mix. In a large, deep skillet half full with oil heated to 350 degrees, add fillets two at a time. Fry for 2-3 minutes on each side, or until golden brown. Drain on paper towels.
