Hawaiian Tea Cookies

1 3/4 cups flour
3/4 tsp salt
1/2 tsp baking soda
1/2 cup butter, softened
1 cup sugar
1 egg
1 tbsp lemon juice
2 tsps vanilla
1 cup shredded coconut

In medium bowl, combine flour, salt and baking soda; set aside. In large bowl, cream butter and sugar until light and fluffy. Beat in egg, lemon juice and vanilla until well mixed. Stir in flour mixture, then coconut until blended. Shape dough in two 2-inch diameter rolls. Add optional decoration (below)
Wrap tight; chill 4 hours or until firm. With sharp, thin knife, using sawing motion, slice dough 1/4 inch thick. Place 1 inch apart on lightly greased baking sheet. Bake in preheated 375 degree oven for 10 to 12 minutes or until slightly golden. Remove to rack to cool. Makes 36 cookies.

Holiday Decoration: Roll dough in colored sugar to coat.
