Lobster and Havarti in Cognac Cream Sauce

Ingredients:

2 C Havarti cheese
1 C light cream
1/4 C cognax
2 tbls. chopped garlic
1 heaping tbls. of black pepper
salt to taste
Fresh tarragon to taste
1 egg
1 lb. fresh lobster meat
thin noodles or pasta of choice


Directions:

Grate the 2 cups of Havarti cheese into a saucepan, stir in light cream, cognac, chopped garlic, black pepper and salt and fresh tarragon. Stirring constantly, let the sauce simmer until all the cheese has melted. Run it through a blender, adding 1 egg in the process. Pour it back into the saucepan and add 1 pound of fresh lobster meat cut into generous chunks. Simmer for a few minutes more. Toss with pasta and serve. Absolutely delicious!! :):)
