1 cup flour
1/2 cup quick oats
3/4 cup light brown sugar

1 orange

- Preheat oven to 400 degrees F.
- Grease and flour muffin tins.
- Sift together the flour, and baking powder. Add the oats. Set aside,
- Grate the rind from the orange, and reserve.
- Discard pith, quarter and seed the orange.
- Place the rind, orange quarters, orange juice, sugar, butter and egg in a blender and mix together.
- Stir the flour and oat mixture into the flour mixture. Mix until combined.
- Gently stir the raisins and pecans into the batter.
- Fill muffin cups about 1/2 full with the batter, and bake for 15 to 20 minutes.
