1 1/2 cups gluten free cookie flour mix (recipe below)
1/8 tsp xanthan gum
3/4 tsp egg replacer
1/8 tsp baking powder
1/8 tsp salt
1/2 cup sugar
1/2 tsp cinnamon
1/8 tsp nutmeg
1 tsp vanilla extract
1/2 cup margarine
1 tbsp water
*can be tinted with food coloring if desired

preheat oven 350*F

combine dry ingredents in a bowl and set aside. in another bowl, beat margarine and suger with an electric mixer until creamy. add water, vanilla, and food coloring (if desired). Add dry ingredients.

Drop onto ungreased cookie sheet about 1" apart. Bake 8-9 minutes. Cool on pan for 2 minutes and then transfer to cooling rack.

Makes 2 1/2 dozen

Gluten free cookie flour mix

2 cups brown rice flour
2 cups potato starch
1 cup tapioca starch
1 cup sweet white rice flour

throuoghly combine all ingredients and store in an airtight container or zippered plastic bag in a cool place.

Makes 6 cups
