Spring Salad

With the weather finally changing and spring finally coming - delicious light salads make a nice light meal -

Combine 1/4 cup rice vinegar and 2 teaspoons sugar in a non-reactive bowl; stir to dissolve.

Stir in 1 English cucumber, thinly sliced and 1/2 cup baby bay shrimp (cooked and rinsed)

Add 2 teaspoons finely chopped fresh chives - toss to coat

Season to taste with salt - cover and chill for at least an hour for the flavors
to meld

To serve - sprinkle with toasted sesame seeds
