Ingredients:
2 lb. summer squash, chopped
water
5 tbls. butter
2/3 C milk
2 eggs, beaten
2 tsp. all-purpose flour
3 tbls. sugar
1 tbls. baking powder
3/4 C finely chopped onion
1 tsp. salt
1/4 tsp. pepper
Directions:
Preheat oven to 400 degrees.
Cook squash in small amount of water until tender. Drain. Mash lightly in a bowl. Add butter. Mix milk, eggs, flour, sugar, baking powder, onion, salt and pepper with mixer. Add squash. Stir well and pour into medium souffle dish which has been greased well. Bake for 30 minutes or until squash is set.
