1 c. sugar
3/4 c. shortening
3 eggs
1 T lemon juice
1/4 t. salt
3 1/2 c. flour
3 t. baking powder
1 c. currants


Cream together: sugar and shortening. Add eggs one at a time. Add lemon juice. Sift together dry ingredients and add to creamed mixture. Add currants. Mix well. Roll out on floured board to about 1/4" in thickness. Cut with a utensil the size of a juice glass. On medium heat in an ungreased electric fry pan or heavy fry pan, brown on each side about 3 to 4 minutes. Yields 3 dozen.
