What do you marinate your steaks in?

Is there something special you do to your steaks to give them that perfect flavor?
 
Most marinades consist of

1) oil - canola, olive, vegetable, etc.

2) acid - vinegar, citrus juice, wine, etc.

3) seasonings of choice


I usually don't marinade my steaks - I like the flavor of the cooking and the seasonings.

When I do marinade it's oil, vinegar and seasonings - similar to an Italian dressing.
 
I really don't marinate I use dry rubs. Emeril Lagosse has a really good steak rub that you can get in the markets. If we do marinate it is in Balsamic vineager and alittle olive oil with onions in there to add flavor.
 
I rarely marinate my steaks, but when I do its because the recipe I'm wanting to try calls for it, so I marinate them in whatever the recipe calls for.

I did try a recipe from Kraftfoods.com that called for marinating the meat. It was originally for pork chops, but I'm sure it could be used on steaks too.

1/4 cup Kraft Original Barbecue Sauce
1/4 cup Kraft Zesty Italian Dressing
1 Tbsp. Grey Poupon Honey Mustard

Mix well in glass baking dish or large resealable bag. Add meat & refrigerate overnight.
 
I usually marinade steak in either honey, soy and garlic marinade that I buy. Sometimes I make my own Garlic and Basil Pesto and rub that into the steak before I cook it. Nothings better than a great piece of steak!
 
I use steak sauce & worcestershire sauce & parsley. That's usually what I marinate my steaks in. They always come out tasting REALLY good. :)
 
I try out the different sauces in grocery stores as marinades but still, nothing can beat the taste fo soy sauce and lemon juice for me.
 
Same here, soy sauce and lemon juice or calamansi juice for my tagalog beef steak. But for the "real" steak, I like them rubbed with garlic and fried in butter.
 
We smoked two briskets the other day and marinated one in orange juice and the other in beer. The OJ one was excellent, the beer one was only OK but not terrific.

I have also used dry rubs with good success. I bought one at Williams Sonoma that I really liked but I think it was only black pepper, mustard, garlic, salt, and 1-2 other things. It would have been very easy to make at home, but I was rushed so I just bought it. It worked great.
 
Usually just with salt and black pepper. I do not want any marinate to overwhelm the flavor of my beef steak! Sometimes I add a bit of barbecue sauce during the grilling.
 
We had rib-eye steaks last night that were simply seasoned with McCormick's Montreal Steak Seasoning. I agree with simscooks, good steaks don't need to be marinated. A little Lawry's garlic salt with parsley might be all you need.

But other cuts of beef might need favor, like round of beef and tenderloin. Those cuts have lean, and so don't have as much natural beef flavor. While not steak, we make a mean cubes of beef round by marinating 1/2" cubes in a mix of garlic, soy sauce, fish sauce and soy oil; and then grill on skewers.
 
ok I am pretty new at cooking things that dont come in a box ...lol...can anyone tell me the basics about marinating and how long you need to do it for?
 
most recipes will tell you how long to marinate the meat/fish/veggies for - sometimes you can marinate overnight and other times for just a couple hours or even 15 t0 30 minutes - most marinating should be done in a non-reactive container - use something like glass - but it always depends on the cut of the meat, the size, etc.

do you have something in mind that you want to marinate? I can be more specific then
 
Nothing really specific I just hear about people marinating steaks and stuff before cooking them on the grill and was just wondering how it worked
 
I don't typically marinade mine either; but occasionally I do in some sort of oil and worschestershire sauce. Our local meat market has a steak seasoning that they make themselves that is absolutely WONDERFUL that we typically use on our steaks.
 
I usually marinate my steak in worchestershire, with garlic, and oregano. Sometimes I just use Italian Dressing. I usually let them marinate for a couple hours at least.
 
Aside from the other marinade ingredients others (worcestershire most importantly) have mentioned, I also put some honey on mine. It doesn't really make the steak sickeningly sweet, but I think it makes the steak's color even more beautiful:D

I use McCormick Seasoning as well. There seasonings are really good on steak.
 
i use a lot of variations but somethings are must for me like
olive oil, vinegar and paprika or some other kind of spice.
 
we normally do beer but we use special beers... flavored beer like a cherry wheat or there is a really good local brewery that has a smoke beer
