Granny Smith Apples

We picked a bushel or more of Granny Smith Apples today.
Got any ideas for me on how to use them?
 
Apple pie, apple streudle, and so on with apple desserts.

I don't have a recipe but I've often bought apple butter from the farmer's market and love it. Maybe someone can contribute a recipe if you're up to all the jarring and preserving.
 
pies, cakes, cookies, yeast breads, tarts, hand pies, baked apples, can some pie filling, apple butter, cook with sauerkraut and pork, etc.
 
Thanks for the ideas. I have a batch of applesauce going for Jon's Dad.
Then I will probably make some apple butter to can.
Im going to make some apple muffins tonight and then probabaly apple pie in a few days.

Here is the muffin recipe I am trying:
The Best Apple Pie Muffins Ever

SERVES 18

Topping
1/2 cup firmly packed brown sugar
1/3 cup all-purpose flour
1/4 cup unsalted butter, melted
1 teaspoon cinnamon
Muffins
1 1/2 cups firmly packed brown sugar
1 tsp. cinnamon
2/3 cup vegetable oil
1 egg
1 1/2 teaspoons vanilla
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk
2 cups diced peeled firm tart apples (such as Spy, Granny Smith)
Note:.
cinnamon could be added to the batter ( about 1 teaspoon or less).

Topping: In a small bowl toss together sugar, flour, butter and cinnamon until crumbly; set aside.
Muffins: In a large bowl whisk together brown sugar, oil, egg and vanilla until smooth.
In a separate bowl, sift together flour, soda and salt.
Stir oil mixture into flour mixture alternately with buttermilk.
Fold in apples, mixing just until combined.
Spoon into greased muffin cups filling 3/4 full.
Sprinkle topping over evenly.
Bake at 350°F for 25-30 minutes or until golden brown and tops spring back.

I made them. They are delish!

Oven Fried Apples

Yield: 6 Cups

10 md Granny Smith apples; peeled, sliced 1/4 to 1/2" thick (about 4 1/2 lbs.)
1/2 c plus 2 T sugar
1/2 c plus 2 T packed brown sugar
2 ts cinnamon
Nutmeg to taste (optional)
1/2 c butter; softened

Preheat oven to 350°. Grease a 13x9x2" baking dish.

Combine sugars, cinnamon and nutmeg. Alternate layers of apples and sugar in baking dish. Dot with butter; bake, covered, 55 minutes.
 
ESCALLOPED APPLES


12 apples (Granny Smith or Macintosh)
1/2 C. butter (1 stick)
1 1/2 C. white granulated sugar
1/4 C. flour
2 tsp. ground cinnamon

Preheat oven to 375F.

Peel and core apples, cut into eighths, then cut those pieces
in half. Melt butter in a large pan. (Bottom of a roaster is best). Add
apple chunks and keep turning the apples over until the butter
absorbed. In a separate bowl, mix sugar, flour and cinnamon together.
Sprinkle evenly over apples until well coated. Do not add water.
Put apple mixture in an ungreased 13 x 9 x 2" glass baking dish.
Cover with foil and bake 15 minutes, or until apples are soft.
Remove from oven. Increase oven temperature to 400.
Turn apples over (this is the only time you do this). Return to
oven and bake, uncovered, on top oven rack until juice is
reduced and apples start getting brown.

Serves 12.
 
Apple Pie-Cake

Because it uses canned pie filling and takes just a few steps, it's a snap to make.

(I use homemade apple pie filling that I freeze each year!)

2 large eggs
1/2 teaspoon vanilla extract
1/3 cup sugar
1 1/4 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
1 21-ounce can of apple pie filling
1 1/2 tablespoon turbinado sugar for sprinkling on top




Preheat the oven to 350 degrees
1. In a medium bowl, beat the eggs, vanilla, and sugar together until smooth and thick?about one minute.
2. In another bowl, mix the dry ingredients. Add them to the egg mixture and stir until well combined.
3. Stir in the pie filling.
4. Pour the mixture into a well-greased, nine-inch deep dish pie pan. Sprinkle the turbinado sugar on top and bake for 20 minutes or until browned and a toothpick inserted in the middle comes out clean.
Serving suggestion: This is one of those desserts that is much better served warm. Heat individual servings in the microwave.



APPLE GINGERBREAD PIE

Makes One 9-inch Pie
8 Servings

Crust
1/2 cup shortening or 1/2 stick
1/4 cup sugar
1 -1/4 cups all-purpose flour
1/2 cup ground pecans
1/2 teaspoon ginger

Filling
4 -1/2 cups thinly sliced, peeled McIntosh or Granny Smith apples (about 1-1/2 pounds or 4 to 5 medium)
3 tablespoons honey
2 tablespoons water
1/3 cup golden raisins
1/3 cup currants
1/2 to 1 teaspoon apple pie spice, to taste

Topping
1 cup whipping cream, whipped
2 tablespoons finely chopped pecans

For crust, heat oven to 375ºF. Cream shortening and sugar until light, using spoon. Stir in flour, ground pecans and ginger. Blend until mixture is uniform. Press into 9-inch pie plate. Bake at 375ºF for 10 to 12 minutes or until lightly browned. Cool.
For filling, combine apples, honey and water in large saucepan. Simmer, covered, 20 minutes or until apples are tender. Stir in raisins, currants and apple pie spice. Cool. Spoon into cooled baked pie crust.
For topping, spread whipped cream over filling. Sprinkle with chopped pecans. Refrigerate until ready to serve.

Well guys those apple muffins were a big hit.
Jon's Dad really loved them and so did his very picky brother.
 
Hi, that's what I was going to say cut them up in slices and dip them into Carmel or make a chocolate fondue. You could also do an apple crisp, that would be good. The little girls are so cute. Cookie :)

I have put a good dent in the granny smiths but when I went to Jons Dads yesterday I picked about 1/2 a bushel of really nice red delicious. I had gone there to take him an apple pie and some apple sauce. I picked up another pack of the eggroll wrappers to make some more of the apple pie rolls for him. I took him 12 of those apple muffins about 3 days ago and he had eaten them all but one when I was there yesterday. His Dad is so good to share goodies with me. I try and cook part of what ever he gives me and take it back to him.

He asked me while I was there if I had picked any of his Kale. I said no. It is way to small to cut. I had noticed while I was getting basil something had cut a lot of it. Seems we have a hungry bunny. I love rabbits. I had one as a pet for years but when it comes to the garden I have no mercy. I told him to shoot the thing if he saw it out there.

I don't think I ever had Kale, I don't even know what it is. I Love Bunny's to but I was just saying they ate one of my hastas green plant in the yard. That's why I don't do a veggie garden any more just flowers.
I went to a small farmers market today got some veggies, and my first BIG PUMPKIN! I LOVE THE FALL. :) YOUR NIECES ARE SO CUTE!! Cookie :)
 
They have a bunch of pumpkins down at Jons brothers. I asked Jons Dad who goes there everyday to feed their horses to bring me a couple of pumpkins to sit out on the balcony by the front door. Normally they dont want us putting anything on the balcony but I noticed a guy around the corner has pumpkins & mums sitting by his door and that colored corn hanging on his door. Its been out there for 2 weeks and they havent said anything to him so Im getting myself a pumpkin. Just watch..they will try and say something to me because our apartment is on the front of the building. They never want us putting anything outside because they dont want it to look like an apartment building from the front.

Kale is pretty yummy. I like it in soup.
Cannellini Bean Soup with Kale and Garlic-Olive Oil Crostini

1/4 cup extra-virgin olive oil, plus more for the bruschetta
6 to 8 cloves garlic, thinly sliced, plus 1 or 2 more whole cloves
2 teaspoons dried oregano
1 (6-ounce) can tomato paste
2 tablespoons red wine vinegar
2 (15-ounce) cans cannellini beans, drained and rinsed
2 quarts chicken stock, water, or a combination
Salt and freshly ground black pepper
1 large bunch kale, large ribs removed, chopped
1 baguette

Heat oil in a large pot. Add garlic and oregano and cook no more than a minute. Add tomato paste and vinegar, and cook another minute. Add beans and stock and bring to a simmer. Season with salt and pepper. Add kale and simmer, partially Covered, for 1 hour. Season, to taste, again with salt and pepper before serving. Slice baguette on a heavy angle to create long slices. Toast in a toaster or in the conventional oven. Rub once or twice with half a garlic clove. Season a shallow plate of extra-virgin olive oil with salt and dip each side of bread into the oil. Serve as accompaniment to the soup.

This one is good also.
Italian Kale


INGREDIENTS:
1 bunch kale, stems removed and leaves coarsely chopped
1 clove garlic, minced
1 tablespoon olive oil
2 tablespoons balsamic vinegar
Salt and ground black pepper to taste

DIRECTIONS:
1.Cook the kale in a large, covered saucepan over medium-high heat until the leaves wilt. Once the volume of the kale is reduced by half, uncover and stir in the garlic, olive oil and vinegar. Cook while stirring for 2 more minutes. Add salt and pepper to taste.

Havent tried this one but will soon:
Hearty Portuguese Kale Soup

1 tablespoon olive oil
1 lb chorizo sausage (fresh not dried)
1 quart chicken broth
1 large onion, roughly diced
4 large potatoes, cubed
1 bunch kale, stemmed washed & chopped (abt. 1 lb.)
1 1/2 cups ditalini
1 (15 ounce) can dark red kidney beans
fresh ground black pepper
salt (optional)

Remove casing from sausage and cut into smaller than bit sized pieces.
Heat oil in a heavy soup pot; saute the sausage& onion just until the fat is rendered, about 3 to 5 minutes.
Drain on paper towels.
Add other ingredients except kale,& pasta.
Bring to boil and simmer 10 minutes.
Add kale, and pasta and simmer about 8 minutes until both are tender.
Taste for seasoning- depending on how spicy your sausage is, add salt and pepper to taste.
Serve piping hot.

Thanks for the recipe, I will have to look for some kale it sounds good - yum :p You can always put your pumpkin inside for fall & decorate it. Cookie :)
 
I could ..but where he hasnt said anything to the other guy he cant say anything to me.
There are only 6 apartments here and the people on one end have patio furniture sitting out by their door. Jon and I shouldnt be held to different rules because our apartment is the only one on the front.
 
Did you get your pumpkins yet? The pumpkin I just bought got a few nibbles into it already. :D I don't care I think it was the squirrels that started to nibble on it. I filled the bird feeders today. We ate outside today. What a great day!! Had some grilled steak & salad. Had a glass of Merlot Wine. Cookie :)
