When I was a single girl, I'd make two batches of meatloaf at once, and freeze individual servings right away. That's not really leftovers, though, is it?

No, not leftovers, just good planning. :D

I haven't made meat loaf in awhile; I should make double the next time and freeze one. I tend to kind of forget about meat loaf most of the time. Don't know why that is. :confused:

I don't mind leftovers at all. I really should put more effort into cooking the proper amounts of food, but then if you have leftovers then that just means you don't have to cook every day. I love to cook but with my job it's sometimes hard to fit everything into the hours in the day.

Plus, we are trying to save money and it's helpful to stretch our food dollars.

I'm always eating leftovers, mainly because I don't eat much (I get full really fast) so there is always stuff "left over", and I'll just eat it later. I can take a meal that one regular, normal, not-weird person would eat in one go, and stretch it to 4 meals.
