Stove top Smoker

I upgraded my stove top smoker to a Nordic Ware recently. I have been using one of the Cameron stove top smokers for a couple of years and really love it. The Nordic Ware has a little more height to it which I like and a thermometer. The Cameron is pretty slim line and you can just fit in 6 turkey legs and the lid still slide on properly. You can of course use the Camerons without the lid and cover it with foil but I never tried it because I figured a large amount of smoke would escape. I look forward to being able to smoke a whole chicken without having to chop it apart to fit in the Cameron smoker.
The new smoker is due to be delivered on the 21st.

I have an electric outdoor smoker indoor roaster but since I live in an apartment I havent really tried it much. I took it to my FIL's once and smoker chicken legs and thighs. We have a balcony outside of our apartment but Im not sure the landlord would like my using it out there. Im sure if I did it once he would have everyone else trying to clutter the balcony with charcoal/gas grills which would be a fire hazard since the balcony is not very wide.
 
I tested the new smoker out today. I have one big gripe about it. The tray you lay the food on to be smoked is very hard to get back out of the smoker. There is nothing really got grab onto it with and you dont want to scratch the non stick surface.

I had a 2 pound salmon filet from Walmart I decided to smoke in it.
I thawed out the filet and rubbed both sides with the following mixture.

1/4 cup coarse kosher salt
1/4 cup light brown sugar, packed
1 teaspoon garlic powder
1 teaspoon pepper

Put it on a sheet pan and covered with plastic wrap. Left it in my fridge for 6 hours. Removed and rinsed off the salmon then dried it off. Then I drizzled with olive oil and a little more pepper. I smoked it in my new smoker for 20 minutes using mesquite chips because we like a strong smoked flavor.
After 20 minutes the filet was perfect and moist. My husband tried it and loved it.

Re: Outdoors smokers and grills, there are Ordinances in Place that the Landlords must abide by that are put into effect by the Fire Marshall, if they get caught not following those Codes they can be fined, and their Insurance Comp. can cancel their Liability and Fire Policies:( They have no choice in the matter many times.

Yeah I figured that. I keep meaning to take that electric smoker to the storage building and just never get around to it. The Nordic Ware lets out a little more smoke that the Cameron did but I just covered it good and tight with foil and took care of it. My stove doesnt have an exhaust fan over it.

That AC still up above the thing?
 
The ac intake is just a few feet to the side of the stove. It is a small kitchen.
Whenever I use the smoker I have to turn off the heat/ac and shut the bedroom door to keep the fire alarm in the bedroom for going off. Then I put a small fan in the kitchen window pulling out air. You can stand it in here for about an hour and a half and then the smoke smell gets a bit much lol.
I cannot really use my grill pan much for the same reason. I put my electric grill on the counter close by the window and do the same thing with the fan.
