Sweet-Hot Barbecue Sauce

Sweet-Hot Barbecue Sauce
(low sodium)
Great for all meats.

Makes: approximately 3 1/2 cups
Sodium per recipe: 274.8 mg
Sodium per cup: 78.5 mg

1 tablespoon extra-virgin olive oil (trace)
1 medium onion, finely diced (3.3 mg)
2 cloves garlic, minced (2 mg)
2 tablespoons lemon zest, finely diced (.72 mg)
1 cup packed brown sugar (85.8 mg)
1/2 teaspoon chili flakes (0 mg)
1/2 teaspoon cayenne pepper (13.1 mg)
1/4 teaspoon freshly ground black pepper (.231 mg)
1/4 cup Contadina tomato paste (39.3 mg)
2 (8-ounce) cans any no-salt-added tomato sauce (128.1 mg)
1/2 cup cider vinegar (1.2 mg)
1/2 tablespoon Life All Natural Worcestershire sauce (2 mg)*

In a medium saucepan set over medium heat, heat the oil and saute onions, garlic, and lemon peel until the onions become translucent but brown. Add the sugar and cook for another 3 minutes, stirring often the chili flakes, cayenne, pepper, tomato paste and sauce, vinegar, Worcestershire, then bring to a boil, reduce the heat to low, and cook 30 minutes. Serve hot.

*Do not use Lea & Perrins unless you can afford to add 110 mg sodium.
