Glorius leftovers!!!

Leftovers. Unappealing to some. A repeat of the same ol' thing by some. Or a totally new and exciting meal by others!

For instance - I like to make too much rice. It's a good excuse to make a quick Spanish rice the next day. Or - depending on the meat I had the day before and if there is some leftover - stirfry over rice. Even re-heated in chicken broth with veggies.

Not enough stew to go around? Serve it over rice or noodles.

Warm leftover rice with chunks of ham, onions and carrots.

Open a can of kidney beans add rice and flavorings - easiest red beans and rice you'll ever make.

Combine leftover rice and whole kernel corn, chopped red and/or green bell pepper, diced onion and stuff tomatoes.

Add rice to your tomato soup on a cold day.

Use it in a casserole with leftover meat (or go meatless) and even leftover veggies! Add broth, a can of condensed soup of choice, top with cracker crumbs or bread crumbs and dot with butter. Or use toast points!

LOL I'm not nearly that creative with my leftovers. My hubby usually eats all the leftovers before they can be made into another meal anyway. LOL But those are really good ideas :)
 
That is great...I love leftovers. I actually save $$ on lunch the next day and sometimes better then the food from local fast food places.
 
I do the same thing. I usually end up with left over rice as well. I like to take the rice (usually used when I make Stirfry) that is left over and use it to make mexican /spanish rice for fajitas or burritos.
 
I use leftover roast in soup.

When we have leftover bread, I let it sit and get stale, then it goes in the food processor. Homemade breadcrumbs taste much better than store bought. I keep them in the freezer till I need them.

I keep a container in the freezer and add leftover veggies to it. Eventually I have enough to make stew.
 
wonderful ideas with the leftover rice! I always make too much and haven't known what to do with it and I end up throwing it away.

I also make my own breadcrumbs with stale bread and keep a baggie of veggies in the freezer to add to stew.

Now, if I could figure out a use for extra spaghetti noodles....I just can't get the amount right when making dinner and have way too many. They end up going to waste because hubby and I don't like leftover spaghetti.
 
I can never make too much rice.... If I do make more than I need for dinner, hubby eats it with butter & sugar for dessert. Now, there's a cheap & sweet dessert. LOL.

My daughters & I usually eat leftovers for lunch during the week.
 
medako - leftover noodles, spaghetti, etc. - geez - nothing like having pre-cooked noodles for soup! Add it to broth with veggies for a quick soup. Just cut up the longer noodles ifyou want.

Heat some olive oil in a pan (not much) with fresh minced garlic, toss in pasta and toss to coat and heat through.

Make a mushroom sauce or a pesto to add to the pasta.

Use leftover pastas of different shapes (combined) and mix with sauce and freeze in individual containers for a quick meal or lunch that you can microwave in an instant.

Cut up the spaghetti and add to tomato soup or cheese soup.

Mix leftover cooked pasta with cheez whiz for a quick mac and cheese.
 
pure genius! Why couldn't I think of that on my own?? I'm gonna blame it on fried mommy brain! :p
 
LOL - I think we all get a case of "food blindness" and I know that it is very easy to fall into the "rut" of the same ol' same ol'.

Mommy brains are on automatic overload 24/7 - with more being added to it all the time!

I use leftover roast for taquitos. We shredd the leftover roast and add some onions roll it up in a corn tortilla and fry them. It is good. Especially if you use Lipton soup as a season on the roast when it is cooked.
 
If we ever have left over roast, my husband takes it to work as sandwiches. Which saves some money on lunchmeat, until my daughters get into it & eat it all.
 
Having left overs is not all that bad. It brings out the creativity of the person. But I don't really know if it brings out the creativity in me. All I do with left overs is mix it with fried rice to make rice toppings or make a soup out of it. :D
