We "cheated" last night and made French Dip Sandwiches. They're so easy to make using deli sliced roast beef, are tasty, and if you use the McCormick Au Jus mix instead of pan drippings, are low in fat. We heat the beef in the Au Jus then serve it on a submarine/hogie roll with gravy on the side to dip the sandwich in. We used to fry potatoes, but for the last year we've baked tator tots and french fries instead to keep the fat down.

What about tonight?

It's August here. Fresh tomatoes. Lettuce. Bread. Bacon. It's time for BLTs! That's what we're having tonight along with a nice garden salad with cucumbers and tomatoes from the local farmer's stand.

Last night was chicken & mushroom stew marsala, served over rice. A simple tossed salad and home-made bread completed the meal.

Tonight will be charlotte of potatoes & scampi, with an herbed tomato sauce, surrounded by nutmeg-glazed rutabaga, and a Cesear salad.

It was one of those busy days - I had so much to do - sure ain't easy being in charge of everything - LOL - and of course it was one of those days where you're hungry and you're not - too much heat. So I cheated completely - pulled out my steam pots and boiled my water; added (frozen) polish sausage and let that cook until it was just about "getting there" - then I tossed in quartered scrubbed taters, baby carrots, and quartered onions. Made a quick white sauce to drizzle over the veggies. Steamed sausage is actually really good - I've done it with Italian and polish and brats. Basically a simple one pot meal!
