Favorite Peanut Butter cookie recipe?

i'm looking for a good, soft & chewy peanut butter cookie recipe. My mother in law has a good one, but I lost it, and she hates me and won't let me have it again.:confused: So, I'm looking for a new one, because I have a ton of PB here and believe it or not; my kids won't eat peanut butter.
 
Soft and Chewy Peanut Butter Cookies

2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/4 cups packed brown sugar
1 1/4 cups white sugar
1 cup butter, softened
3 eggs
1 cup creamy peanut butter
2 teaspoons vanilla extract

1. Preheat oven to 300 degrees F (150 degrees C).
2. In a medium bowl, combine flour, soda, and salt. Mix well with a wire whisk set aside.
3. In a large bowl, blend sugars, using an electric mixer set at medium speed. Add butter, and mix to form a grainy paste, scraping the sides of the bowl. Add eggs, peanut butter and vanilla and mix at medium speed until light and fluffy.
4. Add the flour mixture and mix at low speed until just mixed.
5. Drop by rounded spoonfuls onto an ungreased cookie sheet. With a wet fork gently press cookies in a crisscrossed pattern. Bake for 18-22 minutes or until slightly brown along edges.
 
Thank you! I guess I need to go get some butter. I think all I have is margarine. Can I use vanilla flavoring instead of vanilla extract? Do you think that would be OK?
 
Darn it - I don't have any salt, and it's bad weather outside, so we can't go anywhere. Would it totally mess up the recipe to not use salt??
