chocolate carrot bread

Looking for a receipe for chocolate carrot bread have been scanning the internet but have not come up with any do not want the one with chocolate chips in it Have a chocolate zucchini bread which is very good and was wondering if I should just substitute the carrots for the zucchini?
thank you Arlene

•1 1/2 cups finely grated carrots
•3/4 cup granulated sugar
•1/2 cup canola oil
•1 cup boiling water
•1 1/2 cups whole wheat flour
•1/2 cup unsweetened cocoa
•1 teaspoon cinnamon
•1 1/2 teaspoons baking powder
•1/2 teaspoon salt

In a large mixing bowl, combine carrots, sugar & oil. Pour water over the mixture; set aside. In a separate bowl, combine flour, cocoa, cinnamon, baking powder, and salt. Add to the carrot mixture; mix well. Pour batter into a non-stick or lightly oiled 8" square pan. Bake at 350° for 35 minutes. Frost with cream cheese frosting or a glaze, or serve with whipped topping or ice cream.

I found that recipe on line - that is the way it was printed - no mention of eggs at all. I would add 2 eggs to use as a binder.

I made the chocolate carrot bread it was ok but seemed to be more cake like than a bread I just used a glaze on it but they will eat it anyway I think I might try a few other things in it I will just play around with it.

I know you don't want to put chocolate chips in it - but have you thought of melting the chips and adding them to a carrot chocolate chip bread recipe?
