Baked Pork Tenderloin with Peachy Glaze

2 Pork Tenderloins, rinsed and patted dry
Salt and Pepper or Calypso Shake*
1 sliced onion

Lay pork on baking sheet. Sprinkle with seasoning. Bake at 375 for about 15 minutes. Lay onions atop pork. Bake an additional 15 minutes. Test for doneness--should be pinkish in center, internal temp 150. Remove from oven, slice on the diagonal and drizzle with the peach glaze.

For Peach Glaze:
Stir on stovetop:
1 c. peach preserves
1/4 c. OJ
Calypso Shake Seasoning* to taste

*Calypso Shake is a blend of spices made in the Cafe Sole line from Spice Hunter. I order a box of a variety of spices and soups from Spice Hunter once or twice a year.
 
Calypso Shake

Have you seen Calypso Shake for sale anywhere lately (preferably on the web)? I used to use Calypso Shake for a lot of things and can no longer find it. Thanks!
 
you can make your own if you would like:

spicy -
makes 1/2 c.

2 tablespoons turmeric
1 tablespoon coriander
1 1/2 teaspoon cumin
1 1/2 teaspoon cinnamon
1 teaspoon ginger
1 teaspoon garlic powder
1/2 teaspoon pepper
1/4 teaspoon cloves



Combine all ingredients. Store in an airtight container.



or regular:
males 1/2 c.


1/3 cup instant minced onion
1 tablespoon dry mustard
2 teaspoons ground allspice
2 teaspoons ground cinnamon
2 teaspoons crushed red pepper
1 teaspoon garlic powder
1/2 teaspoon salt


Mix in storage container with tight-fitting lid. Shake or stir before each use.
