Chipotle Bar-B-Que Sauce

My Bar-B-Que sauce, I have won 2, 1st place awards with this sauce. Thought you might like it as well. CF:)

Bill’s Chipotle Bar-B-Que Sauce

Ingredients
1 cup brown sugar
1 cup cider vinegar
1/2 cup molasses, honey, cane syrup
1/2 cup Worcestershire sauce
4 tablespoon yellow mustard
2 tablespoon Chile powder
4 teaspoon black pepper
4 teaspoon onion powder
4 teaspoon garlic powder
2 teaspoon allspice
1/2 teaspoon ground cloves
1/2 cup Chipotle Chiles en adobo sauce (chopped fine or run through blender)
4 cups catsup = 32 oz.
3 cups raspberry, apricot, strawberry, blueberry or what ever preserves you like. I like the apricot best.
Procedure
Combine sugar, vinegar, molasses, Worcestershire sauce, mustard, Chile powder, allspice and cloves.
Bring to simmer over med. heat. Cook uncovered, stirring until all ingredients are dissolved. Stir in catsup and bring to low boil. Reduce heat add preserves and Chipotle pepper. Bring back to low boil. Pour up into jars and cap hot.
Should make about 3 pints.
 
This looks really good. I'm probably going to alter the yellow mustard, and Worcestershire just a little to fit my low sodium diet. The ketsup I can make. Thanks CF.
 
I have Seen a Similar Recipe that rocks just like this in a cook book that i bought a year ago. It has a lot of High caliber Recipe that restaurants uses. Secret Restaurant Recipes finally revealed in "America's Secret Recipes" this is where i found the book.. I am from the South and we have a hard time keeping hungry mouths calm so when you enter a BarBcue Contest, you better bring it so, i owe it all to my recipes from this book.
Today, i made smoked chipotle Fish with ,Caramelized Sherry Carrots, along with Lemon tart Green beans. These folks went crazy on my food. didn't get to eat any, because they are all pigs... lol jk i love them all
 
Guys this is a finishing sauce for chicken or pork. To be applied the last 1/2 hour of the cook. Just to caramelize the sauce, not for basting. I use a dry rub for the main cook, then finish with the sauce. Yes, it is a sweet and spicy sauce. CF:)
