Going camping for Labor Day weekend?

If so here's a kind of neat recipe I found on the KOA (Kampgrounds of America) web-site and thought I would share it here!

Crock Pot Breakfast

Ingredients:
1 bag (32 oz. size) frozen hash brown potatoes
1 pound bacon, diced; or ham, cooked and cubed
1 onion, diced
1 green bell pepper, diced
1 1/2 cup cheddar or Monterey Jack cheese, shredded
1 dozen eggs
1 cup milk
1 teaspoon salt
1 teaspoon pepper (more or less to taste)

Directions:
Place a layer of frozen potatoes on the bottom of the crock pot, followed
by a layer of bacon or ham; then onions, green pepper and cheese. Repeat the layering process two or three more times, ending with a layer of cheese.

Beat the eggs, milk, salt and pepper together. Pour over the crock pot
mixture, cover and turn on low. Cook for 10-12 hours.

Serves 6.
 
CAMPFIRE STEW

1 pound hamburger (crumbled, browned and drained)
1 pound kielbasa sausage (sliced 1/4 inch thick, browned and drained)
1 pound onions (roughly chopped, browned and drained)
1 can stewed tomatoes (S&W Mexican is good)
1 cup barbecue sauce
1 can pork and beans

Combine all ingredients into pot or pan and simmer. Appropriate additions include: chopped jalepeños, chili powder and cayenne pepper
 
Camping Potatoes

Peel and slice as many potates into a old cake pan as you figure your family will eat. Layer it with onions, mushrooms and sliced carrots. Drop dabs of butter on each layer. Pour Zesty Italian Salad Dressing ( yes salad dressing) over the top of the mixture. Approximately 1 cup. Bake in the oven for 2 hours or they can be done on the BBQ as well. If you have extra they are great fried the next day with bacon and eggs. You can add green peppers (or any color) if you like.
 
CAMPER'S PIZZA


12 ounces ground beef, 80% lean
1 medium onion, chopped
1/2 teaspoon salt
8 ounces refrigerated crescent rolls
8 ounces pizza sauce
4 ounces mushroom stems and pieces, drained and chopped
2 1/4 ounces ripe olives, pitted and sliced
1/3 cup green bell pepper, coarsely chopped
4 ounces shredded Mozzarella cheese
1 teaspoon dried oregano leaves, crushed

Cook ground beef and onion in well-seasoned 11 to 12-inch heavy skillet with heat-proof handle over medium coals* until no longer pink, stirring occasionally to break up beef. Remove beef mixture to paper towel; season with salt. Pour off drippings, leaving skillet "greased". Separate crescent roll dough triangles; place in skillet, pressing edges together to form bottom crust and 1-inch rim up side of skillet. Spread half of pizza sauce over dough; spoon ground beef mixture over sauce. Top with mushrooms, olives and bell pepper. Pour remaining sauce over all; sprinkle with cheese and oregano. Place skillet in center of grid over medium coals (see notes). Place cover on cooker and cook 20 to 30 minutes or until crust is lightly browned.
 
Biscuits and Gravy


1 Can Store Biscuits
1/2 Lb. Bulk or Packaged Breakfast Sausage
3-4 Tbsp. of Flour
1 Quart Milk
Salt and Pepper

Place biscuits in a greased, preheated Dutch Oven, cover and cook 10-15 min. Heat milk, brown sausage in a large skillet. When done, sprinkle flour over browned sausage to coat, (you want the sausage to look dry). Cook 3-5 min. then start adding hot milk slowly at first, stirring continously, cook until slightly thick. Turn off heat and gravy will continue to thicken. Serve over torn up biscuits.
 
Chili Cheese Fries


Potatos
1 Can of Chili
1 Jar of Cheese Whiz

Line your dutch oven with foil. Cut as many potatos as desired into french fries. Place in the oven. Top with chili and the entire jar of cheese whiz. I use 8-10 coal on the bottom and 12-14 on top. It takes roughly an hour.
 
ummmmm - Mama don't sleep in tents. Mama don't sleep outdoors. Mama is afraid of her shadow. Her shadow resembles the "dude" at the picnic table in your avatar. He smells my cookin' and I'm a slave to him for life.
Gotta have a Winnebago - then I can go camping. And preferably in civilization (like maybe the Winnebago showroom??) - Mama ain't no forest/wilderness person. Mama's blood type is YELLOW.
 
Chuckwagon Beans

2 qts. canned kidney beans
1 lb. hot dogs sliced about 1/4" thick
1 large Bermuda onion, diced
1 large green pepper, diced
2 T. butter or margarine
1 c. hickory flavored BBQ sauce

Melt butter in large kettle (preferably cast iron). Saute onions and peppers about just until tender, about 5 minutes. Add hot dog pieces and saute until slightly browned. Add BBQ sauce and stir until hot dogs are well coated and sauce starts to thicken. Add the beans and simmer or medium heat until hot, stirring often.
 
Chuckwagon Chowder

1 lb. ground beef browned and drained 1 can pinto beans 1 can whole kernal corn 1 can whole tomatoes 1/4 cup chopped onions 1/4 cup chopped green peppers 1/4 cup chopped celery 1/4 tsp. celery salt 1/4 tsp. onion salt 1/4 tsp. garlic salt 1/4 tsp. chili powder


Mix all ingredients in large crockpot or dutch oven. cook on low heat at least 2 hr., several hrs are better.
 
CAMPERS APPLE CRISP
Makes 3 to 4 small servings

The topping and filling ingredients can be combined at home in separate bags and assembled and cooked at camp.

Topping:
1 cup granola
1/4 cup whole-wheat flour
1 tablespoon nonfat dried milk
2 tablespoons margarine

Filling:
1 1/2 teaspoons ground cinnamon
2 tablespoons firmly packed brown sugar
1/4 teaspoon ground nutmeg
1 teaspoon all-purpose flour
1/2 cup chopped dried apples
1/2 cup chopped dried cherries
1 cup water

To make topping: Mix granola, flour and nonfat dried milk, then knead margarine into the mixture. Place in a resealable plastic bag.
To make filling: Combine cinnamon, brown sugar, nutmeg and flour in a separate plastic bag.

At camp, in a covered pan, simmer the sugar mixture and dried fruit in 1 cup water for 5 minutes or until fruit is soft. Apples may take longer to cook than cherries. Once soft, spoon the topping over the filling and allow to heat through. Spoon into cups to serve.
 
Mama I can not believe you are Yeller!!! I never would have thought of you as being the least bit scarred.

But I like Winnebago's (never had one though):(
I love KOA campgrounds! The little log cabins are what we stay in and they are so cute & cozy! It's semi-roughing it!;) To me just being in the campground is fabulous and cooking over the coals of a fire at night is the best!

Dang mama and Cathy... I LOVE camping, but haven't been in a coon's age! You both make me wanna get packed to head for the hills, though. Yummy recipe ideas- THANKS! :)
