Treasured Gingerbread

SERVES 16
2 cups flour
1 (1 lb) box dark brown sugar
3/4 cup butter, softened
2 teaspoons cinnamon
1 teaspoon baking soda
1 teaspoon nutmeg
1/2 teaspoon ginger
2 large eggs
1 cup buttermilk

Combine flour and sugar.
Cut in butter.
Reserve 1 cup of this mixture for topping.
Add cinnamon, soda, nutmeg and ginger to remaining flour mixture.
Stir in eggs and buttermilk; (Do not use electric mixer).
Pour batter into ungreased 9 x 13 pan.
Sprinkle with reserved topping and bake in preheated 350° oven for 45 minutes or until done.

Speaking of cats... normally I absolutely love my pair- but yesterday I almost made crock-pot kitty-kat surprise! They were nuisances all day long and got into trouble more than my patience held-out! I was cussin''em left & right. Little turds! The absolute last straw was when I was trying to change the sheets on my bed and as I put the freshly-washed, still-warm mattress-pad on, Lilly puked-up a huge gooey fur-ball right smack-dab in the center of it! Then she looked me in the eye w/ one of those "what are you gonna do about it" looks cats are famous for!

lol Reminds me of my little sis saying their new dalmation pup knows to get out of something when he hears..Im gonna smack you hard enough to remove your spots. They never do smack him of course but the threat works lol.
