I was playing around with an idea for roasted chicken. I pureed a meyer lemon with no seeds in my blender with 1/2 cup italian salad dressing (or evoo), several cloves of garlic, oregano, salt and pepper. I love lemon with chicken.
Slathered that inside and out on a 6 pound roaster chicken. Put a pat of butter under the skin on each breast. In the cavity I put a whole head of garlic cut in half with a lemon (quartered). Tied it all up and seasoned the outside with my favorite McCormick Rotisserie Chicken Seasoning. It came out great. The lemon did not make in lemony it just enhanced the over all flavor. Garlic actually came through more than anything. Jon said it was the best chicken yet and told me to write it down before I forgot what I put in it.

Sounds great Janie I use a lot of lemon juice in my beer can chickens in the smoker and it realty helps to keep them moist.
