Our family loves to barbecue lamb chops. We remove any visible fat from each lamb chop before cooking them. Season them according to your taste. We barbecue with a Weber grill, once the coals are ready to cook place the lamb chops directly over the coals for 2-3 minutes watching carefully so not to burn them. Turn them over and cook for another 2-3 minutes over the coals. This will seal the juices in the lamb chops. Move the lamb chops to the side of the coals and lower the Weber lid. Cook for another 10-15 minutes depending on the thickness of your lamb chops. The lamb chops come out terrific. Serve with mint jelly.
Seriously, that sounds fabulous. And I'm also glad to hear I'm not the only one who serves mint jelly with lamb. My husband thinks I'm crazy every time I put out mint jelly when we have lamb.
