I have made pancakes with 4-5 different recipes, and they always turn out gummy, rubbery, and spongey. I follow all the instructions and it's always the same. I tried different fats, different pans, different leaveners, etc. The only one that's decent is pancake mix! Please help, my husband says pancakes are my Achilles heel. I can flambe a crepe with the best of them, but I can't get regular old pancakes right.

Do you use buttermilk? I find that's the key to pancakes for me.

The best pancakes that we have made in household were Sourdough pancakes. They taste great and are the fluffy and light. I will pull out the recipe and post it for you.

A friend of mine had that problem - now they use club soda in place of the liquid called for in the recipe! I haven't tried it - but as soon as I get club soda I am going to!

Hey, what a great idea. I have some club soda lying around that I bought for some unknown reason. This would be a great way to use it.

I'll report back if it's any good.
