Fried Squash Blossoms anyone?

Hey MamaM,

You hit the nail on the head, I am really dreading it! Maybe I can leave the dubious task up to my fiance', and hope he doesn't call the engagement off:o. Then I'll just come home to the baked version!!!

In another day gone by, I could not have been more than 27 yrs old we raised and butchered our own, and here I was city born & bred and never even cleaned a fish much less. Then I had this groovy hubby who hunted, fished, farmed, and taught me all this cool "livin off the fat o da land" thing and I really did not mind at all. One season we cleaned a whole flock of chickens.

For some reason it just does not appeal to me now! I am wondering if there is a local butcher shop that will dress them out for me, I am going to find out that's for sure!

What is Mama's favorite type of food to cook?
I like to make comfort food..and Italian dishes.
We have a friend who is from Thailand. His Mom is going to give me lessons on cooking authentic Thai food. This is great..except I can only understand every third or fourth word she says lol. Could make the lessons interesting. Maybe I can video tape her and watch them at home lol.
 
Mama makes quite a bit - with more than 50 years and restaurant work behind me - I've done more than my fair share of cooking and baking - and I ain't done yet!

I am a pasta lover - of course. You cannot be Italian and not like pasta, sauce and breads!

I have no blood in my veins - it is all sauce - so hook up the sauce-filled IV bag if I need it.

Pastas - all kinds - big, small, short, long, stuffed, super-stuffed - give it to me.

Breads - OMG. I would die without bread.

Cannolis, Italian cookies, cakes and pies - the more the better.

Stuffed meat rolls, meatballs, homemade Italian sausage - if I had a penny for everyone I've made I'd be the richedst person in the world.

Pizza - old-fashioned Napolitan pizza is my #1 all time favorite. And I have several others I enjoy.

Calzones, frittattas, I could go on and on and on..................
 
My God..what you could teach a person about food.
Its to bad more people arent active in this forum.
Someone with your experience and willing to share is a great thing.

I want to try frittattas next. I just bet my round little hubby would love those.
What is your fav recipe for them?

Your Napolitan pizza, have you posted the recipe here in the forum anywhere? I would love to have it!!!

Your comment about sauce running through your veins is funny, I know without even tasting it your sauce rocks!!!

Believe me - anyone who lives close - I would be teaching! someday I am going to have to tape myself in the kitchen for the afternoon - making bread and ravioli, cake, etc.

As far as frittattas go - I am a "flipper" - which means I can flip an omelet or a frittatta by simply tossing it in the air and catching it in the pan. I can also do a good flip on a griddle. I want a restaurant sized griddle in my kitchen so bad!!

Now - a couple of my favorites - heat a bit of olive oil in a saute/omelet pan. Saute some fresh minced garlic for just about 30 seconds, add chopped fresh escarole and/or spinach. LOVE ESCAROLE! Wilt it down, season with salt and pepper; beat my eggs; pour over; cook one side and flip; cook the other side. If you can't flip - place in the oven to cook the top.

If you want to try to flip - don't flip over the stove - you miss and you have one heluva mess!

I also love various peppers and veggies and onions - just any mix I feel like having. Even leftover buttered broccoli, etc. can be "recycled" for these.

You can add crumbled sausage of choice (breakfast, Italian, polish, brats, etc) - anything goes.

No recipe needed really Cathy. I did post a pizza recipe way back when I first joined the site. You can easily use that dough recipe - or any dough recipe if you have a favorite.

Now this is how my family has done it for generations -

spread your dough
sprinkle with olive oil and spread (fingers work well)
grab some roma tomatoes and smash them with your hands, saving the juices for future cooking (waste not!) and spread over the top of the dough
season with very little salt (because of the cheese), pepper, basil, marjoram
sprinkle with a light coating of fresh grated Pecorino Romano

bake
eat

you can use diced tomatoes from a can (drain well) and you can also blanch and remove the skins from your tomatoes

the amount of cheese is very little - its the tomatoes and dough you want

wanna fancy it up??? place anchovies on top

I have some fresh spinach in the fridge. May try this for breakfast.
