If You're Not a Fan of Salmon...

My friend Anne dislikes salmon. Or shall I say she USED to dislike salmon until she came across this simple recipe! Now she cooks it for family and friends and she swears by it!

In a small saucepan melt together:
2 t. butter,
1 T. brown sugar
1 t. honey.

Remove from heat and whisk-in:
1 T. olive oil
1 T. dijon mustard
1 T. soy sauce
S&P.

Brush this onto a 2-3 lb. fillet of salmon as it grills or bakes in the oven.

*Anne also uses this same grilling-baste for chicken and pork.

Oh my, my chubbyalaskagriz, tell your friend to by any old fish. :o I would not do that to the delicate taste fo salmom. It's nearly sacrilige.;)

>>the delicate taste fo salmon.

lot to be said for that thought - otoh, "same old-same old" gets tiresome after a while.

nothing wrong with 'dressing it up' a bit!

Actually, Keziah- the Pacific Northwest varieties- especially Alaskan Kings, are very robust in flavor and quite hearty. They stand-up well to flavor enhancers. It's common here to see simple grilled praperations and more complex ones, as well.

Are you familiar w/ Maxine Clark? One of my all-time fav l'il salmon cookbooks is hers: Amazon.com: Salmon (9781841721873): Maxine Clark, William Lingwood: Books
