Lemon Poppy Seed Bread

Ingredients:

1 tbls. plus 1/3 C lemonade concentrate
1 stick butter, softened
2 large eggs
1 C sugar
1 1/2 C all-purpose flour
1/4 tsp. salt
1 tsp. baking powder
1/2 C milk
2 tbs. plus 1 tsp. poppy seeds


Directions:

Preheat oven to 350 degrees.

Combine 1 tbls. of lemonade concentrate, butter, eggs, sugar, flour, salt, baking powder, milk and 2 tbls. poppy seeds. Beat with electric mixer on medium speed for 3 minutes. Pour butter into greased 9 X 5-inch loaf pan. Bake for 55 to 60 minutes or until toothpick inserted in center comes out clean.

Remove bread from oven. Spread 1/3 C lemonade concentrate over top of hot bread. Sprinkle bread with 1 tsp. of poppy seeds. Serve warm or at room temperature. Will simply melt in your mouth. :D
 
Melts in my mouth better without the lemon stuff. I love plain ole poppy seed bread. This batter is too thick for my mixer so I just do the mixing with heavy wooden spoon and elbow grease. Sometimes I drizzle a light coating of xxx sugar glaze.
