Macaroni Salad

I enjoy this macaroni salad recipe.

Ingredients:

16 ounces elbow macaroni
1 cup sour cream
1/2 cup mayonnaise
1/2 cup chopped fresh parsley
1 tablespoon lemon juice 1/2 teaspoon salt
1/2 teaspoon pepper
1 cup cucumber, diced
1 cup broccoli florets
1/4 cup carrot, chopped

Directions:

1. In a large pot of salted boiling water, cook pasta for 8 to 10 minutes or until al dente and drain. Let pasta cool.

2. In a large bowl, combine the sour cream, mayonnaise, parsley, lemon juice, salt and pepper.

3. Add the vegetables and pasta. Toss.

4. Cover and chill in refrigerator.

Time: 20 minutes

I love homemade pasta/macaroni salad! The ones from the deli that are swimming in some sort of viscuous liquid I do not care for... but home made, whether mayo based, vinaigrette based or somewhere in between, I love.
 
I'll bet this is good. I make a simular version but without the mayo, carrots and broccoli. It does, however, have chopped bell pepper and lots of onion.
