Ingredients:
2 slices bacon, cut into half-inch pieces
1 tbls. olive oil
2 large carrots, sliced
1 large onion, chopped fine
1 medium potato, diced
2 tomatoes, peeled and chopped
1 stalk celery, chopped
1 large clove garlic, minced
1 C cabbage, shredded
2 14.5 oz. cans beef broth
1 8-oz can tomato sauce
1/2 tsp. Italian seasoning
1/3 C elbow macaroni
1 15.8 oz can great northern beans
Directions:
Place all ingredients except macaroni and beans in a large kettle. Cook until vegetables are nearly tender. Add macaroni and beans. Water can be added at this poiint, if necessary. Cook until macaroni is tender, about 10 to 12 minutes longer. This is really delicious!
