Ingredients:

1 C chunky Peanut Butter
1 C plus 2 Tbls. firmly packed light brown sugar
1 large egg, beaten
1 tsp. vanilla
1-2 Tbls. all-purpose flour
1/2 C jam or jelly


Directions:

Preheat oven to 375 degrees.

Line 2 baking sheets with parchment paper.

Combine the peanut butter and brown sugar in a medium bowl. Beat with an electric mixer set on high speeed until blended. Beat in the egg and vanilla until blended.

Place the flour in a shallow dish. Drop 24 tsp. of dough 2 inches apart onto the prepared baking sheets. Flatten the balls, using a fork dipped in the flour.

Bake cookies until edges are lightly browned, 8 to 11 minutes. Let stand on the baking sheets 1 minute before transferring to a wire rack to cool completely.

Spoon the jam or jelly onto the bottom sides of 12 cookies. Top with the remaining 12 cookies. Serve immediately. Another yummy thing you can do is spread a thin layer of marshmallow fluff on each cookie half and then spoon on the jam or jelly and put remaining cookie halves on top. This is really delicious!
