Pineapples -

Pineapple Casserole

1 stick butter, softened
3/4 cup sugar
5 pieces white bread, toasted and crumbled
3 eggs

Large can crushed pineapple with juice Cream together butter and sugar. Combine eggs with mixture and beat til fluffy. Add bread and pineapple and mix well. Bake at 350 degrees for 40 minutes.
 
Florida Pie

1/2 cup sugar
4 tbsp flour
1/2 tsp salt
1 cup orange juice
1 tbsp lemon juice
3 egg yolks, beaten
1 tsp butter
1/2 cup drained crushed pineapple
1 Graham Cracker Pie Shell
Marshmallow Meringue (recipe follows)
1/2 cup moist shredded coconut


Mix sugar, flour and salt together in top of double boiler. Add fruit juices and cook for 10 minutes, stirring occasionally.

Add slowly to egg yolks, return to heat and cook 3 minutes, stirring constantly. Remove from heat; add butter and pineapple. Cool and pour into pie shell.

Cover with meringue, sprinkle with coconut and proceed as directed (see meringue recipe). Makes 1 (9-inch) pie.


Marshmallow Meringue

1/2 lb marshmallows
1 tbsp milk
2 egg whites
1/4 cup sugar
1/4 tsp salt
1/2 tsp vanilla

Heat marshmallows and milk together, folding over until marshmallows are half melted. Remove from heat and continue folding until mixture is smooth and fluffy.

Beat egg whites, add sugar gradually and continue beating until stiff and smooth. Add salt and vanilla. Blend into marshmallow mixture and spread over pie.
 
BAKED STUFFED PINEAPPLE PORK CHOPS

6 ( 1/2-inch) thick center cut pork chops
Stuffing (recipe follows)
1 small can pineapple slices

Preheat oven to 350ºF.

Place pork chops in a baking dish in oven, covered, and bake
approximately 30 minutes. Do not turn over. Pour off excess grease, if
necessary. Do not let the pork chops become too brown.

Stuffing

6 slices day old bread
1 onion (either fried or microwaved)
2 stalks celery, either fried
or microwaved
1 or 2 eggs

Mix all stuffing ingredients with a little water.

Remove pork chops from baking pan; uncover, place stuffing mixture on
top of each pork chop. Return to oven, uncovered, and bake for 30 to 40
minutes more, checking to be sure the pork does not stick or burn. If
moisture evaporates, add 1/2 cup of water. Ten minutes before done,
place a pineapple slice on each pork chop and finish baking.
 
mama (YUM!)- we serve a similar pineapple casserole with Ham Suppers- but our's has the addition of shredded cheddar cheese added-in. Must be a dairy state thang- Ha! :)
 
I picked up a couple of small fresh pineapples at the store today. They were on sale for $2 each. I have already eaten one by itself lol.
 
I'm never lucky enough to find a small pineapple, the ones I see are a big as an ice bucket. Too much for one, even a greedy one like me.
 
Pineapple Salsa Recipe

1 cup diced fresh pineapple
1/2 cup diced red bell pepper
1/2 cup diced cucumber
2 teaspoons rice vinegar

Combine all ingredients in a small bowl.

Great over steaks or fish or served with chips.

Liz, thanks for sharing the salsa recipe. My DH just sliced two fresh pineapples (they were given to us) yesterday and now I can use some of it this way. They are so sweet and delicious.
 
Jello In a Can

1 20 oz can sliced pineapple
3 ounces Jello gelatin -- your choice
1 cup boiling water

Pour off pineapple juice from can but leave pineapple in the can (Save juice for another use).

Dissolve jello in boiling water. Cool slightly. Pour into can over the pineapple. Chill until set.

To serve, run knife around inside of can and tip out. Slice between the pineapple rings.

One of my favorite things to do with fresh pineapple is to grill it.

Just brush it with a little melted butter and throw it on the grill. When it starts to caramelize on one side, flip it.

Lay it in the center of a plate and top with a scoop of vanilla ice cream. If you really want to gild the lily, add a little warm caramel or dulce de leche over the top.
 
I love to skewer pineapple chunks with shrimp, onion, and peppers. Season them with salt and pepper, and grill them!

I also had a dish last year that was made with sweet potato, coconut, pineapple, and marshmallows. It was good. I'd love to find a recipe for it.
 
I make a sweet and sour chicken stir-fry,

1 lb. chicken cut into bite size pieces
1 1 can (8 oz.) pineapple chunks in juice, undrained
1 can 10 1/2 oz. low sodium chicken broth
1 1/2 cups white rice (prepare to to pkg. directions)
1/2 cup sweet'n sour sauce (la-choy)
1 bag (16 oz.) frozen stir-fry veggies
Add oil to wok, add chicken pieces, about 5 min. or until cooked. add veggies and pineapple juice. stir in chicken broth and 1 tablespoon of soy-sauce mix well, bring to boil.

after rice is cooked stir in sweet'n sour sauce. Makes 4 servings (cook time 15 min.) You can also use pork instead of chicken. Cookie:)

I have a recipe around here somewheres for a Huli Huli Pineapple. Its basically an entire pineapple that is peeled. Yuo can cut the eyes out by cutting a groove the depth of the eyes from the top to the bottom of the pineapple. With some work, press a Rotiserie skewer through the core. Put this set up on the grill and as it spins glaze the pineapple with a rum caramel sauce to build up a nice glaze. keep the heat low so not to burn the glaze.
This is my favorite use for pineapple .
For the glaze you can cheat by using caramel sauce that you would use for an ice cream topping. Heat about a cup of it over low heat and stir in about 1/4 cup of rum.
 
Well , I started my diet this past week and I make a delish treat with pineapple :)


I use 1 can unsweatened crushed pineapple ...drain juice in a small pan add 2 pkg gelatin (the plain kind )... add 1/4 cup water and heat till it desolves

grate 1 carrot
grate 1 cellery stick (removing all strings )

mix 1 pkg of non fat powdered milk with 2 cups cold water

combine everything in a large bowl and refrigerate till it sets

I eat this whenever I feel the need for a treat :)
if not dieting you can add some sugar or artificial sweatner but I prefer mine without ..Its nice and crunchy so it satifies me between meals .
 
A unique and different dish that's fantastic served alongside smoked ham!

Scalloped Pineapple Casserole

20 oz. can pineapple chunks, juice packed
3 tbsp. flour
3 tbsp. sugar
3 tbsp. butter, melted
1 1/4 c. shredded Cheddar cheese
1 1/2 c. (about 25) crushed Ritz crackers

Drain pineapple, reserving 3 tablespoons of juice. Arrange pineapple on bottom of greased 1 1/2 quart casserole dish. Stir together the flour and sugar, sprinkle over pineapple. Drizzle reserved pineapple juice over the top with the Cheddar cheese. Mix together the crushed crackers and melted butter; spread over the cheese. Bake covered at 350 degrees for 15 minutes. Uncover and bake 10 minutes longer. Great with ham!
 
Mama I am definitely going to try that absolutely wonderful recipe for my pork chops, my husband and son loves center cut pork chops wait until I surprise them, they have been complaining off lately that I seem to be cooking the same food all the time.
