Recipe of the Week #3 - Zuchinni Chips

Here's an interesting way to serve zucchini that was posted by Raquelita in September 2006. The recipe is Zucchini Oven Chips, a breaded zucchini slice that is baked on a rack in the oven until crisp. Test one of the thick slices to make sure the chip is crisp before removing from the oven since oven temperatures vary.

The final result is a tasty, crunchy chip flavored with garlic and Parmesan cheese. This is a great recipe to serve with weekend barbecues. The effort for preparation is minimal and since the cooking time is 1/2 hour, that leaves plenty of time to cook the burgers or steaks. When serving with chicken, start baking these zucchini chips 1/2 hour after starting to cook the chicken

This looks like a good idea. I would probably go heavier on the garlic and add a few other veggies in the mix like maybe an eggplant and another type of zuchini.
 
Yeah, some eggplant, yellow squash and even a nice meaty tomato are adaptable to this recipe. I made the recipe for this post and can say for certain that is really a tasty vegetable side dish.

You've all heard of eggplant parmesan - so why not use zucchini chips??
Place a bit of sauce in the bottom of your baking dish/casserole, layer zucchini with cheese and sauce, top with sauce and sprinkle with a nice Italian blend of cheeses; 350 to heat through and melt cheese!

A great side dish to serve with chicken or pork!


Or try a nice mix of breaded zucchini, eggplant, tomato slices and crookneck (summer) squash with cheese (using a buttered/oiled casserole). Serve with spaghetti sauce drizzled over each serving.
 
I'm thinking these would taste great dipped in an Italian seasoned tomato sauce.
 
Old Bay - OH YEAH!!! But then again - I dip anything in a good sauce!!! I have no blood in my body - it's all sauce! Just hook me up to an IV of it!
 
How about taking some very large mushrooms and slicing them thick and sprinkling them with garlic and parmesan cheese and baking them. I love mushrooms and love to work them into the dishes I cook.

mmmmmmmmmmmmmmmmmmm and dip in thick spaghetti sauce (sorry - sometimes I have a one track mind!) LOL
 
Mama how about dipping the veggies (whatever your favorite is for this recipe) into some thick and spicy salsa.
 
that's ok - but remember - I'm an old Italian and it's hard to take my sauce away - rip out my hair, dig out my eyes, cut off my legs - just IV me with sauce! LOL

tomato sauce and salsa sound like a really good idea. i bet you could do a cream based sauce to like alfredo. or have a bunch of sauces for your guests to choose from.

It is really amazing. My kids also like the recipe. I serve it with orange juice. It was really a great combination.
