So I had some leftover fried shrimp....I know, I know.....leftover fried shrimp 
....anyway....I wanted chicken Parmesan for dinner so I decided to turn the leftover fried shrimp into Shrimp Parmesan. I put hot pasta and warmed pasta sauce together in individual baking dishes, stuck the cold shrimp around the edges and topped with some mozzarella and parmesan cheeses. I put it in the oven under the broiler just long enough to melt the cheese. Oh my....it was sooooooo good.
