Swirled Cheesecake Nibbles

SWIRLED CHEESECAKE NIBBLES

MAKES 3 DOZEN MINI CHEESECAKES

36 vanilla wafers
1 2/3 c. (10 oz.) Nestle Toll House Swirled Morsels, divided
2 pkgs. (8 oz. each) cream cheese
½ c. sugar
2 T. flour
2 large eggs
1 t. vanilla extract

Preheat oven to 350* F. Line 36 muffin cups; place wafer in each. Place 5 to 6 morsels o top of each wafer. Beat cream cheese, sugar and flour until creamy. Add eggs and vanilla; beat well. Spoon heaping tablespoon mixture into each cup. Bake 15 to 17 minutes or until just set and not browned. While still warm, top with remaining morsels. Cool. Cover and refrigerate.

Hi there. I just joined the site today (11-25-07) and am going crazy reading. I think I just found my next experiment when I read this recipe. My dad will LOVE you for this one. I always use him as my "test subject" when baking something I haven't tried before. I think I'll add some cherry pie filling to the top and see what happens.

Love your name...I should have called myself chatty something. You'll soon realize what I mean. My mom and I LOVE to cook so I will be spending a LOT of time here. I've already tried a couple of recipes I found here and can't wait to keep going. This is my favorite time of year for baking. I can bake all day long and not have to worry about who's going to eat all the stuff I make. :confused: My dad can only eat so much at a time then his Dr. gets mad at me. :p
Thanks for replying and I look forward to sharing recipes with everyone here. I make a lot of stuff just by looking in the cabinets and deciding what sounds good. If the "concoction" (sp?) turns out well, I'll share.

Your poor Dad! It must be hard to live with someone who loves to cook and then have to hear "It" from your Dr. afterwards!
Looking forward to your new concotions!!! And I find the word concotion so fitting, I do the same at times, and lo and behold we can come up with some good ones most of the time!
I am glad you find my screen name neat, I actually didn't know what to call myself, then I remembered a doll that was popular when I was just a tike, and it just fit at the moment! Because when I thought hard on it I decided the one subject I can actually find myself "chatty" about is cooking (and my dog)!!! So LOL there you have it, the rest of the story!

My name is a long story but I'll try to condense it for you. Since I can remember (I'm now 36) my mom has always called me "Roo". She says I liked Roo (the kangaroo) from Winnie the Pooh, but I don't think I really did...LOL
The bee71 was just a suggestion that came up when I registered on eBay a long time ago. Therefore, Roobee71 it is. (71 being my year of birth....YIKES).
About the concoctions....funny (short, hopefully) story about that. My daughter (10 yrs. old) has lots of friends that spend as much time here as at their own homes. One friend in particular always ends up being here for my "concoctions". One of them, by the way, was HORRIBLE. But anyway, she was here last week one night and saw me at the stove and said, "uhhh, is that another concoction?" It was really cute. (She liked this one, by the way. I don't even remember what it was!!! :confused:)

I dearly love nick-names! I am raising an 8 yr. old grandchild and she got the nickname "Pooh" back 6 yrs. ago when Winnie-the-Pooh was her favorite! Or hey it may have just been my FAVORITE ;).
I got the giggles when I read how your neighbor kid liked your concotion! It's funny isn't it that among our kids friends we "Rock" simply beacuse we are in the kitchen actually cooking real meals! I LOVE IT!
Funny thing though I have to admit when I first read that I thought you meant the kid was horrible :eek: not the concotion! LOL. In our neighborhood we have a few horrible kids mixed in:rolleyes:! And they all just love my front yard and talking to me while I cook-my kitchen window overlooks the front! They are so funny 'cause they will say real sweet-like "that smells so good!" And there I am with the dilema of wether or not to let them taste some. It's a catch-22, if I feed them will they hang around 4-ever:confused:
