Tonight I decided to make banana bread 'cause I had some overripe bananas. I was also feeling lazy so I used a box mix and added the mashed bananas, which the box said was do-able. However, the bread FELL when I took it out of the oven. I have never had that happen before. Did it know that I didn't stir it exactly 75 strokes or something?? I cannot figure out what happened.

Several things could have happened - oven temp not what the dial says, not bake long enough (you cannot bake it the same length of time as a cake mix -banana breads are done when they are done - can take an hour or so depending on the pan size), too many bananas, etc.

Here's a recipe:

Cake Mix Banana Bread

1 yellow cake mix
1/8 tsp. baking soda
3/4 cup water
3 eggs
1/3 cup oil
1 cup mashed bananas
chopped nuts, if desired

Add baking soda to dry ingredients. Add remaining ingredients and blend until well mixed. Place in loaf pans. Do not fill more than half full. Bake at 350 until tests done in center (around 45 minutes, depends on pan size.)

Hmmm, i've never had that happen to me before. I'm not sure what happened? Did it still taste alright?

Yes I have never had this happen to me before nether but you have now made me want some of your bread I bet that it was good even though this happened.

It tasted fine, just sort of compressed. The funny part is that when I took it out of the oven, the top of the bread was all nice and rounded, like normal. But I let it cool for a few minutes and then checked back and it had collapsed!
