K, just re-read Mama's suggestions and you know, I bet I put in too many bananas. Seriously, it said to add half a cup of mashed bananas and I got carried away (didn't want to waste ripe bananas) and put in more like a cup. That probably made it too dense, huh?

Twinmama - the next time you don't want to waste bananas - peel and measure them out into 1/2 or 1 c. measures and place in plastic bags and freeze for future use. You can do that with fresh pumpkins - cook, puree, measure and freeze. It may not last for a year in the freezer - but you can use it within a couple months in other recipes.

I, too, use the freezer trick. Works like a charm.

Next time, why not try making the bread from scratch? It's so easy, and much tastier than the boxed variety.

One of my favorite recipes calls for honey instead of sugar. Between the honey and the over ripe bananas, the bread comes out nice and sweet, but not as sweet as a cake, kwim? I'll try to locate the recipe and post it for you.
