Actually is Prescott that small? a search shows 40,000 residents and a pretty interesting demographic. I would think there would be Asian and Hispanic markets for sure and possibly others?
here is a great source for grains, etc. You should also be able to find many of their items in the health food department of bigger supermarkets-- Grains, Beans, Seeds - Bob's Red Mill (Page 2)

Prescott, AZ has grown considerably since I moved here in '93, but , the
choice of stores is much the same as it was....MANY restaurants have gone
"belly up". It is a tourist town....lots in Western History...I belong to groups that dress in costume most of the time...Our opera house is 104 yrs old.
We have only one "kitchen" shop and it isn't very large. It is really a STEAK AND POTATOES town.....
