I sweet white corn and mix in a small can of Original Rotel. It makes a great side dish for any meal.

Mrs. Chipotle thanks for the idea of using it with Velveeta to make a great and easy cheese dip.

Ah, that's an old idea - wish I could take credit for it. :D

A friend of mine puts hot sausage in hers (regular breakfast sausage, cooked and crumbled) and that is quite tasty. Really you could add most anything - cooked ground beef, taco seasoning, beans, cooked rice....

Yes, yes, yes.
It's a staple in my pantry, especially with football season right around the corner. I'll be making lots of Rotel/chesse dip and taco soup.

Oh yes, I'd almost forgotten about taco soup! (of course, when it's 100+ degrees outside, who wants to eat soup?).

That's a staple in our house in the fall. So quick and simple.
