Just Desserts is a really good one of Paula's.
I saw her make that velveeta fudge when she was on Iron Chef last Christmas. Was it really good? I cannot imagine cheese and chocolate together lol.
That was a funny episode of Iron Chef. It was Paula Deen and Cat Cora taking on Tyler Florence and Robert Irvine. The secret ingredient was sugar. The girls beat them bad lol.

Janie, keep in mind that Velveeta isn't really cheese; it's a processed, oil-based product that resembles cheese.

What it does, according to many people I know who have tried it, is make the fudge smoother and creamier, without detracting from the actual flavor.

I don't know firsthand, as I don't eat fudge, because the sugar hurts my teeth. But I know a lot of fudgeheads, and all of them who have tasted the Velveeta version say it's good.

Interestingly, my first exposure to Velveeta fudge was from a farmwife in Iowa, whose mother had taught it to her. So the recipe has, apparently, been around for a very long time.

I made the recipe in Paula's little book and one thing she remarks on that I defintiely found to be true is, after the fudge is spread into the pan and as it is cooling, one needs to blot it w/ several paper-towels to absorb off excess, seeping oil. Once this is completed, it's a pretty normal and straight-forward preparation. The product is creamy, rich and delicious and there is no hint that one is actually eating Velveeta. In Paula's recipe she jokes that the first time she made it, she took some out to ladies in the park across the way to let them sample it- when one gal took a bite she was in heaven- and when Paula revealed the secret ingredient, the gal replied "You're sh#tting me?!!"

Well, I am not Sh***ing anyone I have always hated Velveeta cheese since I was 12 yrs old and my greatgrandmother tried to make me eat a cheese sandwich made with velveeta (I actually had to sneak & throw it out) and that is saying alot for a girl who NEVER was one to waste food & I pretty much would eat anything in sight! I feel it is way over-rated and WAY over priced. And not to be mean or to kick a good thing why not just make fudge the standard way, is this velveeta fudge really that good? Just wondering! And I love cheese all the way, it's just that velveeta is like some kind of fake flavored cheese in my opinion....and you know the old saying about opinions!!! Smile, Cathy

I think I will stick with my Mom's fudge recipe..without the velveeta.
