I THINK MY OWN COOKING AND SEASONING TECHNIQUES ENABLED ME TO EAT THINGS THAT PREVIOUSLY MADE ME GAG!
You are definitely right there. There are so many foods I hated as a kid that I learned I really like when I make them myself. I'm a strange one in that I actually remember things that happened when I was 2 or 3. Most people don't remember when they were that young. I remember my mother giving me baby food and I hated it. I didn't want to eat that nasty stuff. I wanted to eat the fresh veggies from my grandmother's garden. I also was a butter bandit. If you left the refrigerator unguarded for more than a minute I would have gobbled up every stick of butter in there.
I love eggplant fritters, eggplant parm, moussaka, roasted eggplant, etc but any dish that says roast the eggplant and scoop out the pulp..... no thanks.
